Ingredients
- 2 large pink lady apples
½ tsp ground cinnamon
¼ cup rolled oats
1.5 tbsp plain flour
½ tbsp maple syrup
1 tbsp margarine
Custard:
1 cup So Good Soy Regular
3 tbsp stevia granulated
3 tbsp cornstarch/cornflour
Pinch of turmeric (optional, for colour)
1 tsp vanilla paste or extract
Method
Halve the apples then use a spoon to scoop out the centre/core. Sprinkle with cinnamon and pop into your air-fryer basket and set aside.
Mix together the oats, flour, maple syrup and vegan butter until well-combined. Spoon into the centre of each apple halve then air-fry at 180°C for 15 minutes or until apples have softened. If the tops are burning or browning too fast, cover with foil and return to air-fryer.
In the meantime, add all the custard ingredients into a saucepan, whisk well and bring to a gentle simmer. Once bubbling, continue to whisk until just thickened. Remove from heat.
To serve, place the apple halves onto a plate and spoon over the prepared custard. Enjoy.
