These easy, dairy free oat pancakes are made with So Good Oat milk and are a great Sunday breakfast treat for the famiiy. Perfect with any topping these vegan pancakes are delicious and the quick prep and cook time will make it a winner for busy families.

Ingredients

  • 2 1/2 cups flour
  • 2 tbs brown sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 1/2 cups So Good Oat Milk No Added Sugar or So Good Soy Regular
  • 1 cup water
  • 3 tbs extra virgin olive oil or canola oil
  • 1 tsp vanilla extract

Method

  1. Whisk together flour, brown sugar, baking powder and salt in a large bowl.
  2. Add So Good Milk, water, oil and vanilla extract. Mix until smooth.
  3. Coat the pan with a little oil and heat it over medium heat.
  4. Pour the batter onto hot pan and cook until bubbles form. Turn over and continue cooking for 2 minutes.
  5. Transfer to a plate and repeat with the remaining batter.
  6. Stack on a plate. Sift powdered sugar over and garnish with fresh berries (optional)
