Ingredients2 cups frozen dragon fruit pieces
1/2 cup frozen raspberries
2 large frozen bananas, chopped
1 cup So Good™ Coconut Milk Unsweetened
2 tbs coconut flakes, toasted
2 tbs blueberries
2 tbs fresh diced dragon fruit
- Place dragon fruit, raspberries and banana and coconut milk in a blender and blend until thick and creamy.
- Spoon mixture into glasses and top with toppers. Serves 2.
- Dragon fruit is another name for Pitaya and frozen pitaya can be purchased from Health Food stores.
- As bananas become over ripe, peel and place them in the freezer. Frozen banana gives nice cream its smooth creamy texture.
