Ingredients
• ½ cup So Good Almond milk Unsweetened™• 2 eggs
• ½ cup rice flour
• ½ brown onion, diced
• ½ capsicum, diced
• 1 carrot, grated
• 3 mushrooms, sliced
• 1 cup baby spinach leaves
• ½ cup grated cheese
• 1 tsp baking powder
• Salt and pepper to taste
Method
1. Pre-heat oven to 180 degrees (fan-forced).2. Combine all ingredients in a bowl and mix.
3. Pour the mixture into a prepared muffin tray.
4. Bake in the oven for 20 minutes on 180 or until lightly browned.
