- ½ cup short grain or arborio rice
- 1L Almond Coconut Milk Unsweetened
- 2 tbs agave nectar
- 1 tsp vanilla
- Place rice, Almond Coconut Milk, agave nectar and vanilla in a heavy based saucepan.
- Bring mixture to the boil over medium heat, then reduce heat and simmer until mixture has thickened.
- Serve with fruit of choice and toasted coconut flakes.

- Agave nectar can be substituted with sugar if desired.
