Acai chia puddings

This simple, easy to make chia pudding is an awesome meal on the run, whether it's breakfast, a snack or dessert. Prepare the night before and take to work.

Ingredients

  • 1/2 cup chia seeds
  • 1/2 tsp maple syrup
  • 2 tsp acai powder*
  • 1 tsp vanilla essence
  • 2 cups So Good™ Almond Milk Unsweetened
  • 1/2 cup coconut yoghurt
  • 1/4 cup berries

Method

  1. Combine chia seeds, maple syrup, acai powder, vanilla essence and almond milk in a bowl. Stir until well combined. Refrigerate overnight.
  2. Divide half the chia pudding mixture between two jars. Add layers of yoghurt, berries and remaining chia pudding. Top with fresh berries and coconut flakes.

Tips

  • *Acai powder can be found in some supermarkets and health food stores but is not an essential ingredient and can be omitted from the recipe.
